Almond fresh milk tea

Ingredients:
North Chinese almond/北杏 - 70g
South Chinese almond/南杏 - 130g
Fresh milk/鲜奶 - 1lit
Rock sugar/冰糖 - 150g
Hot water/热水 - 0.5 lit
Preparation:
1) Wash the Chinese almonds and soak in 0.5 lit of hot water for 1 hour.
2) Pour the Chinese almonds together with the water into a blender and blend till it becomes almond juice.
3) Pour the almond juice into a pot, bring to boil and switch to smaller fire to boil for 20 minutes. Constantly stir to prevent overheating. (Add in additional water to make sure the almond juice dissolve fully)
4) Add the rock sugar and stir. Filter using a strainer.
5) Add in fresh milk and the tea is ready to be served.
6) For better taste, chill it before serving.

Ingredients:
1) Chrysanthemum/菊花 - 20g
2) Prunellae Vulgaris/Selfheal/夏枯草 - 20g
3) Cassia Seed/决明子 - 20g
4) Water/水 - 3bowls
5) Rock sugar
Direction:
1) Rinse the ingredients and bring to boil with 3 bowls of water.
2) Boil the mixture till amount equates to 1 bowl of water.
3) Add in rock sugars (amount depending on how sweet you want it to be)
4) Consume while warm.

Ingredients:
1) Small chicken
2) Salt
3)1litre of water
Chinese herbs:
1) Radix Codonopsis/党参 - 25g (2 stalks)
2)Black Astragalus Root/北芪 - 7g (2 pieces)
3) Red Dates/红枣 - 2g (10 pieces)
4) Wolf berries/枸杞子 - 15g
5) Szechwan Lovage Rhizom/川芎 - 5g (3 pieces)
6) Chinese dried yam/淮山 - 20g
7) Tuckahoe/茯苓 - 20g
8) Fragrant solomon seal rhizome/玉竹 - 50g
9) Cordycep flowers/虫草花 - 5g
Directions:
1) Rinse all the ingredients (except wolfberry) with water.
2) If your red dates have seeds, remove seeds to reduce the heat properties.
3) Boil the small chicken for 5 minutes to remove the oil. Pour away the water and put the chicken aside.
4) Pour 4 bowls of water (amount of water depends on desired concentration) into the pot and bring to boil.
5) Add in the ingredients together with the chicken (without wolfberry) and a tablespoon of salt when the water starts to boil.
6) Boil for 1/2 hour.
7) 5 mins before the 1/2 hour is up, add in the wolfberry. The soup is ready to be served.
